Chewy Chocolate for Passover

These cookies are absolutely decadent. They remind me of a chewy fudge cookie that is sold in a large cookie store chain.

Ingredients

  • 1.5 cups powdered sugar
  • 1/3 cup dark cocoa powder
  • 1/4 teaspoon salt
  • 3 large egg whites, at room temperature
  • 1 cup semi sweet chocolate chips

Instructions

  • Preheat oven to 350. Line a baking sheet with parchment paper and spray paper with cooking spray.
  • In a medium mixing bowl, stir together powdered sugar, cocoa powder, and salt.
  • Add in egg whites and stir with a large spoon until well mixed. It will resemble brownie batter. Once mixed, stir in chocolate chips.
  • Use a small cookie dough scoop to scoop out onto prepared baking sheet, leaving about two inches between each cookie.
  • Bake for 12-14 minutes, or until cookies are set and look cracked across the top. Allow to cool completely before removing from baking sheet.
